    I did nothing for the first official day. In fact, I forgot, lol. I remembered when I saw all of our public school friends posted pictures in their kids’first day of school outfits. My kids didn’t even get dressed until it was bike riding time in the evening, lol.

    It looks like there’s baking soda and apple cider vinegar in that recipe if I’m remembering correctly. So you would want to preheat the oven first, and have it ready to put the muffins in right away for the best rise.

    Don’t feel guilty. I made them bc I had the ingredients and they took 5 minutes! Bonus that they were yummy!

    I made them last night, it was not the first day of school but our first day of co-op so there you go!!

    They were very good but it did take me more then 5 minutes! (scraping everything out of the blender is more time consuming than using a bowl, I would use the food processor next time)

    My batter was pourable, so easy clean-up.

    I made them yesterday too! They were awesome! I pu carob chips in mine!

    Nourishing Home’s chicken parmesan is wonderful! We’ve been eating it almost once every week or 2 for months. I use almond flour (I think she calls for homemade bread crumbs). We eat it with spaghetti squash. Yummy!

    Her recipes are great!

    I have chicken parmesean with spaghetti squash down for next week’s meals. But the squash will be a first for us. I hope everyone likes it!

    Just don’t overcook it! It gets mushy…still tastes good, just mushy.
