As far as the erythritol unless you know without a doubt it is GMO free do not use it.  There are only a few that I know that are.  I stay away from erythritol and xylitol as much as possible.  Sticking with Stevia.  There are a few recipes I don’t know what to do without them though because it doesn’t mix right with consistancy.

Lindsey – would you share why you are going through this?  If not I totally understand, but if you would I wuold love to hear the how, when, why of it all.

Here are the blog posts I’ve done so far about what I’m going through: http://todayindietzville.blogspot.com/search/label/nutritional%20balancing?m=0

No, oat fiber, arrowroot, and corn starch are all out for me. Doctor’s orders are a pretty strict low-carb diet that is grain-free (except for blue corn because it is very high in antioxidants, weird, huh?). I can have brown rice occasionally, but I really do my best to steer clear of grains because of my gut issues.

It’s ok, Misty. Don’t feel bad. 😉 It hasn’t been bad at all. And like I said, I’m not craving sweets. Just trying to add a bit of variety to include tastes that I miss.

Has he mentioned anything about dry roasting rice in order to use it as it somehow changes how the body processes it? Would love to hear if that is actually true.

And thanks for the blog link. I had heard of nutritional balancing for heavy metals being a much better route than chelation and am looking forward to reading your story.
