These may be on the list already, but I couldn’t find the list to check this am.
Ability to sort by day of the week to help see if one day is overloaded
Ability to designate an item to once per week and have it disappear once checked until the following Monday. For example, my kids have “Write a letter to someone” one time per week and do it during free time, mostly. I don’t care which day it gets done, but once checked, I would like for it to “hide” until the next week.

You can do this now. Create a resource for the activity and give it a few divisions that are either blank or labeled as you like. Schedule the activity for Mondays. It will appear on Monday but if it’s not marked done then it will continue to show on each following day. Once it’s marked done then the next division will appear, but not until the following Monday.
The number of divisions you give the resource will determine how long it will go without needing to be rescheduled. I’d recommend doing a few months worth and then rescheduling it to keep it from getting unwieldy.
I just schedule it daily and only mark it on the day I actually do it. If I am printing my schedule, I just note that I am saving for a later date, or just mark it out with my pen, showing that we didn’t do it.
