I was looking through The Handbook of Nature Study, especially at the table of contents and I wondering if just doing nature study from grades 1-6 would be okay. The Handbook cover weather and soil and rocks besides birds, plants, and the other topics. Then in 7th grade start with Apologia’s stuff. Would this be a doable idea?

Only doing nature study for grades 1-6 is very doable. You can use the Handbook of Nature Study as a guide to help you organize your studies. Libraries usually carry a good selection of good living books for nature for this age group too. Read many books, spend hours outside observing, do some inside nature study when you can’t get out, and you will have laid the ground work for the more formal studies later.

Oh yes! This would give a great foundation in science. Go for it!
