    Our favorite for lunch and anytime: The super salad….lettuce topped with whatever is available-cheese (feta), veggies, hard-boiled eggs, olives, nuts (almonds, sunflower seeds), sprouted seeds/legumes (lentils)…dressing: balsamic vinegar with olive oil, dijon mustard, and a pinch of pepper. With a little prep, salads are the quickest, most customizable, and healthiest of lunches.

    We also do the “surprise plates” here!  My kids love those.   We do leftovers, sandwiches, soups, etc.  Sometimes, I will make a “sandwich variety plate”, i.e. ham or turkey/cheese, pbj, tuna, etc.  Depending how many are here for lunch is how I base the number of each type of sandwich.  I then cut them into small triangles or make finger sandwiches, we usually have veggie sticks or tortilla chips with some kind of dip.    We are not big breakfast eaters around here, so lunch is usually early and plentiful!  We also do plenty of snacks, because dinner is usually later in the evening.  

    Love this post!  Always looking for new, fresh ideas!

    Haven’t used this for a while… (I should…) but there are a lot of great ideas on the KraftCanada website.  These are for lunch-boxes but could be great for home, or for a picnic or something like that.   Now of course they are selling Kraft products with this… but you could use substitutions etc.

    If you like avocados, (which I do!), I like to incorporate it into my sandwiches for variety. For fun the other day, I put it on my grilled cheese sandwiches and they grilled up deliciously! Or make some guacamole and serve with healthy variety of tortillas or chips.

    We have popcorn with fruit for lunch at least once a week. It’s not microwave popcorn either. We buy organic popping kernels and pop it up on the stove with good coconut oil. Slicing some apples or watermelons or canteloupe makes it a healthy, easy lunch.

    We also do baked potatoes with butter, sour cream, and cheese.

    If we have zucchini or banana bread already baked, we’ll have that with fruit and veggies sometimes.

    As a rare treat, we will have nitrite/nitrate-free, organic, all-beef or all-chicken hot dogs (w/o the bun).

    I keep a good supply of pre-cooked, pureed beans in my freezer. If you have some tortillas or tostada shells, thaw the beans, cut the tip off the ziploc, and pipe the beans onto the tortillas or tostadas. We like to top ours with raw cheddar before baking. Then we serve with sour cream or homemade salsa on top.

    Noodles with butter and cheese are yummy.

    Here’s a great website w/ good ideas weelicious.com.  We get in a complete rut, and I have very picky eaters, so I don’t have a ton of ideas.  One thing I didn’t see mentioned yet, that I got off that website is “banana dog bites.”  It’s a tortilla spread w/ peanut butter and a banana rolled in it.  You then slice it into little bites.   It’s great and filling.  🙂
