Looking for fresh summer dinner ideas!

    Ok.. so it’s time to switch up my monthly meal planning and thought before I get to far I would see if any of you have any new ideas.  Things I’m looking for: grilling idea’s, using the crockpot (my favorite appliance by far), and things that be “fresh” as in maybe not cooked, using more raw foods?  Well I just thought I would see what you have and I will post one of our family favorite summer “fresh” meals.

    Spicy (or not) Thai Wraps (because of the double space I will write all the ingredients as one paragraph)

    1/2 cup chopped raw cahews, 1 tbls sesame oil, 1/2 tsp salt, 1/4 cup maple syrup, 1/2 cup lemon juice, 2 tbls chopped ginger, (optional for spicy 1 tbls chopped red chilie seeds included), 1 cup raw almond butter (or I have used regular raw peanut butter but the almond definately is better flavor), 1/2 head cabbage chopped and shredded, 6 large collard green leaves, 1 large carrot cut into matchistick size pieces, 2 large ripe mango cut lengthwise into strips, (optional 2 cups bean sprouts), 1 handful of cilantro & basil, 1/2 handful mint leaves

    1> In a small bowl mix the cashews, sesame oil and salt, set aside

    2: blender: puree the syrup, lemon juice, ginger, chile.  Add the almond butter and blend at low speed to get a cake batter like consistency.

    3: In a med bowl add the shredded cabbage and the alond butter mixture and toss well

    4: Cut the rib of the collard green so as to make it flat (they stick up to much) then layer the cabbage mixture, sprinkle the chopped cashes of the, layer carrots, mango, sprouts, etc. and then roll the leaf up and enjoy.

    This is a great dish that we use much of the garden for and also it’s very statifying on a hot summer day.  I hope someone else takes teh chance I did and makes it our family all enjoy it, but we really like the cashew mix and I tend to double it and give us all extra.

    Misty, that sounds yummy!

    A favorite of ours (I love the crockpot, too!) are fahitas.  Veggies in it aren’t raw, of course, but we add other fresh produce.

    Put 6 chicken breasts in crockpot, add slices of green peppers and onions, cover with Italian Dressing (I use Trader Joes Tuscan Italian with balsamic vinegar, no hydrogenated oils, etc.)   Cook 4-5 hours on low, depending on pot.

    When done, slice chicken into strips. Put  chicken and veggies in whole wheat tortilla and add whatever inredients you like.  We add lettuce, tomato, guacomole (just smashed avacodo with some garlic and fresh lemon), sour cream, salsa.  I’ll add a fresh fruit with it and some whole wheat chips.  Very yummy and simple!!   Can’t wait to hear more ideas:)  Gina

    That’s perfect and simple!  Thanks Gina I will add that one my family will love it.  I can use all sorts of things in my garden! Also how many would you say that serves?

    We love Low Country Boil.  Put a large pot of water on and boil corn, chopped in halves.  Once corn is done, remove from pot and add new potatoes.  After 20 minutes add cut up sausage links and Old Bay seasoning.  About 1-3 TB of the Old Bay is good, depending on if you like spicy or not.  Cook sausage add back in corn and then Shrimp.  Boil Shrimp in with others 5 minutes.  Drain everything and serve on a large platter.

    Hi Misty,

    We have a family of four, two kids 7 and 10.  We get 2-3 meals out of it.  You can, of course, just decrease the chicken per fahita and add more veggies/toppings to stretch the meat:)   Gina
