Cheap healthy meals?

    We’re replacing our soup and bread meal from winter with a salad and sandwich meal. I know there are soup recipes for warm weather, but I haven’t taken the time to look for them yet. I’m also trying what I call a “tortilla family” (taco, quesadila, sandwich wrap etc) meal once a week so I don’t have to turn on the oven. I make casseroles from leftover main dish meats/veggies during winter and figure I can put pretty close to anything we had in a casserole in a tortilla and roll it up. And pasta is a stove top meal, not necessarily the oven. We tend to eat more pasta in the summer and potatoes in the fall/winter. Another stove top meal is a stir-fry with rice. If you have a grill you could try using that more as well – that would keep the majority of the heat out of the house altogether. I’ve thought of cooking ahead for the week, and trying to turn the oven on just once and cooking more than one meal at a time – but I haven’t gotten that organized yet!
