I believe the Visits to …. series are meant to be used once a week, however, I’d like to try to combine these two this year as my daughter only has 3 years left of high school. Would this work if done twice a week? Has anyone done this?

It should work just fine. I have never combined, but have used two already. Last year we did Middle East in 24 rather than 36 weeks without issue. You could simply schedule two days a week and do one each day.
