    I’m looking for some yummy recipes for hot weather.  Something that won’t be hot when it is served.  My DH works outside and when he gets home after a long hot day, he doesn’t want a hot meal to go with it.  Problem is, I don’t know what to make.  He usually has sandwiches for lunch, so isn’t very excited about seeing them for supper, too.  We are vegetarian, so looking for recipes without meat or that would be good with the meat left out or something substituted for it.  Thanks

    A friend of mine sometimes makes gazpacho after a long day outdoors. The first time she made it, I didn’t think a cold soup sounded very appetizing, but of course I tried it to be polite. It was sooo delicious, I ended up having a couple bowls

    Hi Just wanted to suggest this site. It has great recipes …cold soups and different sandwiches maybe you haven’t had..(such as vegan chicken salad) All recipes are vegan!

    One of our favorite meals is hummus spread on flatbread with a side salad (the side salad we make with this has black olives, goat cheese, thin sliced red onion, and a light dressing–using EVOO, red wine vinegar, and dry mustard powder).  

    Also, we make single sized pita bread pizzas alot. We serve sliced fruit/veggies or a green smoothie to the side.

    We eat salad as a main course about once/week in the warmer months….you can add chick peas, kidney beans, or nuts to give it some protein and maybe make some hearty bread or muffins ahead of time.  

    I haven’t made tabouli, but I’m sure it is delicious.  Using quinoa in place of couscous would give it added protein.  I think I’m going to try to find a good recipe for this soon.  

    Taco salad (chips, beans, lettuce, tomatoes, guacamole, salsa, cheese, and whatever else).

    Maybe you could make some veggie bean burgers ahead of time and just add the cold fixings.  

    I hope you get many more replies, because although we are not vegetarian, we eat less meat than we used to and I’m looking for new ideas as well.
