    No, I’m not making this for Christmas…that would torture my kids:) Just wondering how you all make it (if your kids like it). Toppings, favorite dressings, etc. would be appreciated. My kids enjoy salads at other people’s houses or when eating out…but do not enjoy mine. Frankly, I don’t really enjoy them either…but make us all eat them anyway:)  I like the dressings to be natural, w/o the hydrogenated oils, colorings, etc. But frankly, they just don’t taste as good. My homemade oil and vinegar tastes decent, but one child doesn’t like that type and they both still don’t really care for the salads. Any help to get more greens in w/o complaint appreciated!!     We’ve enjoyed spinach salads with almonds & mandarin oranges (and some sort of citrus-y dressing, but I can’t recall what right now), and I love it with bacon & a sweet-sour dressing or a raspberry vinaigrette. In fact, I’m thinking that maybe a spinach salad would be good with some bits of that nitrate-/nitrite-free pepperoni that Rachel posted the recipe for in a recent thread!

    I’ve also heard that you can sneak spinach into fruit smoothies successfully.

    Fresh spinach, strawberries, walnuts and a raspberry vinaigrette is a favorite here. I buy natural dressings, not perfect, but very tasty. I keep trying to make rasp. vinaigrette without success. We like spinach in smoothies, too. When it’s warm, of course. Also, chopped finely in scrambled eggs.

    Dried cranberries, apples and crispy pecans are good.  I make a red wine vinegar maple vinaigrette to put on it.  We eat spinach salad almost every day.  Pears are good too on it.

    Use baby spinach. Much more palatable, IMO. My kids like baby spinach.

    I hadn’t thought of pears with spinach….I’ll have to try that. But what I’m really salivating over is the red wine maple vinaigrette…..care to share, Pollysoup???

    I also intended to mention that I had a warm bacon dressing (either sweet & sour or some sort of vinaigrette) at a restaurant years ago, and it was really delicious warm. Not too hot so as to wilt the spinach, just a bit warm. I have never come across a recipe like that, though.

    Oooh…one of my favorites! Chopped apples, blue cheese, chopped bacon, crispy pecans, and a vinaigrette….your choice.  YUM!

    Thanks for all the ideas! Will definitely be trying some. My kids don’t usually like adding a lot of stuff to their salads when I ask….think I just need to make some of these up and serve:) Thanks, hope you all have a blessed Christmas!!!

    We did a mixture of some of those and added the raisins.  Mmmm…   I didn’t know others made this.  I have a recipe but it is at home and it is really good.  sorry I couldn’t help more.  I really hope I get a new computer soon! I will hopefully be able to share more then… 🙂

    My favorite salad dressing lately is this:

    1/3 cup Olive Oil

    3 Tbsp Red Wine Vinegar

    1 1/2 tsp Sugar

    1 1/2 tsp Spicy Brown Mustard

    1 clove Garlic

    1/2 tsp Salt

    Pepper

    DIRECTIONS: 

    Mix dressing ingredients together and stir or shake well.

    This goes well with a salad topped with pears/apples, goat cheese, toasted nuts, dried cranberries, strawberries, etc.

     

    I have also done another simple vinagrette with just red wine vinegar, olive oil and sugar – I use that one on a spinach salad with strawberries and candied pecans and feta or goat cheese. I don’t have a recipe for that one.
