I have read about moms transcribing narrations, either by hand or on the computer, which I think is fabulous.

Does anyone ever use a tape recorder/digital recorder, so kids can listen to themselves, and/or Mama can transcribe them later?  What are your thoughts on doing that?

I’m thinking of this because my homeschool umbrella school is pretty keen on work samples/paper trails, and I think this would be a good way to “document” our school.

I recommend that technique often. It allows extra time to transcribe (either for Mom or the child starting written narrations) and provides a great “non-paper” trail of work done. It can also come in handy when an older child is ready to narrate orally but Mom is busy with another student.
