Linabean ParticipantHello all! We are going on a long trip next week and I have a LOT to do to prepare for this as we are going for my brother’s wedding and are all very involved in it. I am needing to make food ahead of time for traveling as well as while we are there. I was wondering if anyone here has a really yummy chicken salad recipe that is still yummy after it has been frozen. If so, would you mind sharing?

blue j ParticipantI would think this would still work after it had been frozen, though I admit to never having tried. If I were to do so, here is how I would do it:
Chicken (obviously)
Celery
Onion (optional)Mix these and freeze.
Defrost above and add:
Diced apples (optional)
Grape halves (also optional but so yummy in this)
Walnuts or Pecans if desired
MayoMix well and serve. 🙂
The items that need to be added can easily be brought along with you then added when you’re ready. Will that work for your needs?

simple home MemberThis is a good chicken salad from Paula Deen that even my children love:
- Chopped cooked chicken
- 1/2 cup of sour cream
- 1/2 cup of mayo
- green grapes (halved)
- chopped pecans (optional, I love it in this though)
- salt and pepper to taste
Mix all the above and refrigerate. Double or triple for more if desired.
