OK. My grandmother’s recipe is nearly famous; she was a Pumpkin Queen. Or something. LOL Her family was German-speaking Church of the Brethren and they all made this. But it is NOT healthy!
Mix in a large mixing bowl: 2 cups sugar; 1 cup vegetable oil or shortening; 4 eggs. Mix in 1 can pumpkin puree and 2/3 cup of water. Then mix together: 3 1/3 cups flour, 1 t cinnamon, 1 t nutmeg, 2 t baking soda. Mix into the wet ingredients. Pour into two greased 9×5 bread pans and bake at 350 for about 1 hour. My grandma always baked this in round coffee cans, though. I like to take it out when it’s a bit soft on top but my mom bakes it until the crack on the top is dry. This is rich and decadent. You can make it worse by adding chocolate chips. I have MANY pumpkin bread recipes, but none of them are quite this good. We only do this one at Christmas and Thanksgiving since it is sooo rich. But my Grandma Zella baked it ALL the time.
