OT – Recipe for a Crowd

    My Mexican Gumbo recipe is my best attempt to copy the one served at Qdoba Restaurants.  Chipotle has something like it called the Burrito Bowl.  I think it could be played around with a bit yet, but here it is in its simplest form:

    3-4 lbs chicken breast, cut into bite-sized pieces and cooked

    1 small bag black beans (16 oz) — I often cook these on low overnight in the crock pot

    1 bag of frozen corn

    2 quarts of chopped tomatoes 

    taco seasoning

    After the chicken is cooked, this can all go into a crock pot to be kept warm.  You could also add some onions and pepper, or add salsa instead of the tomatoes and seasoning.  I serve this over cilantro lime rice — just cook your rice in the regular way (I make about three cups- dry) and add about one Tbsp. of lime juice and 1/4 cup chopped cilantro.  Then we top with cheese, sour cream, guacamole, salsa, chips, etc.  It’s so easy and this serves 12-15.

    Thanks for sharing the Chipotle style rice bowl recipe…my favorite dish there! Can’t wait to try it:)
