OT: Breakfast Help

    Ladies, eating breakfast is so imporant.  Packing one for a husband who has to eat in the car is mind boggling for me.

    Here is typically what I put in his lunch for the day: protein shake, 2 hard boiled eggs, 2 sausage links, fruit (breakfast) veggies, snack, hot dog/brat/meat sandwhich (one of those type of things), string cheese, a stevia flavored pop.  Lunch is easy to switch up week to week.  But he is sick of the 2 eggs & 2 sausage links for breakfast.

    He doesn’t like oats so that for me leaves out a lot of oatmeal baked items I could pack.  It can’t be hot, it has to be eating with a hand not silverware.  So what can I pack in this mans lunch box for breakfast?  Also, he is always hungry no matter how much we put in there.  How to keep our hard working daddy happy in his box?  Help, suggestions, comments.. anything would be appreciated.  Misty

    HI Misty, How about a breakfast burrito. if you roll them tight they are no mess at all.

    Could it be hot/warm if you wrap say scrambled eggs and sausage in a healthy tortilla wrap? How about some Greek Yogurt in lieu of the protein drink once in a while? If he can’t eat it with a spoon, make it into a smoothie. Hope this helps.

    What about nuts? Cubed meats and cheeses? Lara bars, bought, or homemade?

    high protein muffins (using quinoa/flax/nuts to up the protein) alternating w/cheese and fruits inside them. Muffins are very versatile.

    english muffins.

    How about sausage balls? If you don’t like the “regular” recipe, you can make them w/ Pamela’s GF Flour, shredded cheese, and turkey sausage that you can turn into breakfast sausage by adding a little maple syrup, sage, salt, and pepper. I can eat those warm or cold ..well not straight from the frig!

    Banana Muffins add some flax for extra nutrients! Homemade granola with plenty of nuts and seed for sustainability! Biscuits w/ cheese wrap in tin foil w/ bacon or sausage slipped in. It should keep a little warm for a while. HTH

    What about breakfast sandwiches, like peanut butter and banana. Or a smoothie (with whole fat greek yogurt) instead of protein shake. If he is open to non stereotypical breakfast foods you would have a lot of options. All kinds of sandwiches, wraps of all kinds.

    Thanks ladies, I am going to try the muffins and turkey breakfast sausage as a change of pace.  I appreciate the ideas.  He doesn’t like nuts as a snack becuase they make his teeth ‘dirty’ and he’s afraid he’ll talk with his customer and have something in it.  LOL   We have done the meat cubes and cheese cubes.  I have rolled things in wraps but never thought about doing scrambled eggs.  Will have to try that one also.

    Maybe you could “accidentally” roll over & knock him out of bed 15 minutes early, and then….”Oh, sorry, honey. Well, now that you’re up anyway, how about sitting down & eating breakfast before you go?”

    Just kidding, since I don’t know the ins & outs of his morning situation! Wink

    I make big batches of quiche regularly… With a little flour in the mix to “set” it enough that it doesn’t need a crust. Good cold or thrown in the microwave for a minute, and you can easily eat it wrapped in a napkin. It works great for quick breakfasts for all of us, actually. My hubby also loves scotch eggs… Same ingredients as hardboiled eggs and sausage links, but a different take. I make them primal, so baked in the oven without breading.

    Wanted to share we made cupcake size quiche’s and home made turkey breakfast sausage ‘meatballs’ for my dh’s lunch and he said they were wonderful.  I figure I can really mix up the flavor and ingredients in those and I can make ahead and freeze.  So now i have hurtled the husband food and what to do with all my extra eggs!Smile  Thanks ladies I knew I could count on you!
