Bag of hashbrowns-frozen
pre-cooked bacon &/or sausage links cut or hamburger seasoned with breakfast blend (which ever I have on hand)
chopped – onions, green peppers,
Shredded cheese
dozen eggs scrambled
This is always a hit and so very basic.
The night before I put all the ingredients in and my crockpot runs high so I set it on low before I got to bed around 9pm.
You can put it in any way you want, layer it, dump each set of ingredients, the only thing you need to do is put the eggs over the top. You can add any additions you want, onion powder, garlic powder.. etc.
Simple yet always a hit

Do you know about how long you are cooking it for?? 8, 9 hours?? My crock runs high, too, and I’ll put it on low, but don’t want to end up with burnt cheese/eggs, LOL.

ParticipantWhen you say your crockpot “runs high,” do you mean that it cooks at a hotter temperature than you’d like?
@Misty, or did you mean that you cook it on high until bedtime, then turn it to low overnight?

ParticipantI don’t know about Misty’s, but I know my crockpot seems to get super hot and I have to watch it or food will burn, even on low. I ended up baking a casserole instead of using the crockpot recipe as I didn’t trust my crock to cook thoroughly enough on low or to cook too quick enough on high
. I do plan to make this in the crock when I’m home for the day and we want breakfast for dinner. I’d feel better about watching it to see how much time it really takes to cook it in my crockpot and what setting is the best.

ParticipantMy crockpot just seems to get to hot and I find running it on low from 9pm to 7-8am in the next day is good. Medium is ok also, but high just over cooks everything and it’s dry.

ParticipantI have a crockpot that gets hot on high, too. But, the following recipe seems to work well on low overnight (I don’t start it before 9:30 p.m.) I just make sure not to sleep in the next morning. ;0)
Crock Pot Morning Casserole
1 bag (32 oz.) frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed (I use turkey bacon/sausage.)
1 medium diced onion
1 green bell pepper diced
1 1/2 c. shredded cheddar or Monterrey Jack cheese
1 dozen eggs
1 cup milk
1 t. salt
1 t. pepper (more or less to taste)
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk and salt and pepper together. Pour over the crockpot mixture, cover and turn on low. Cook for 10-12 hours. (I don’t cook it this long to avoid scorching.)
I found this and other breakfast crockpot recipes at http://www.thatsmyhome.com way back in ’09. I assume the site is still there. If it is, you’ll find lots of other easy crockpot recipes.

ParticipantI tried to do a casserole like the one Misty this week end. I do not buy hashbrown patato, could not find any recipe w/regular patatoes but it worked out pretty good. No cheese either (we have one kid who seems better w/out). I used unsweetened almond milk and a little chicken broth I had. Also added frozen spinash.
It was pretty good! thanks for the idea!

ParticipantI didn’t do layers really, just mixted everything in! I cut the patatoes in small pieces.
