I am back at this again.  I really appreciate this post.  We have enjoyed baked oatmeal with various fruit combinations, bananas and blueberries, apples and cranberries, and peaches.  There are many overnight French toast casserole recipes, some with fruit or cream cheese, we will try.  Although I would like a healthier option than white or French bread.  Any ideas?

I am going to try this healthy oat and yogurt fruit pizza:

I am looking for an egg breakfast casserole that does not use pork products, but tastes great.  Thanks.

I try to avoid cereal unless it is homemade granola with milk on top. Our go to breakfasts are:

whole fat Greek yogurt (Cabot brand) with granola/fruit/honey on top. This has 22g of fat in 1c. My skinny kids need this!

banana with natural peanut butter smeared over it sliced up. The older kids get a banana and a half. Sometimes we put granola on top of this too.

oatmeal made with frozen organic blue berries. I always add a couple T of butter to add some fat.

On the weekend I make pancakes.  My favorite for the kids is Pioneer Woman’s sour cream pancakes. They aren’t my favorite but if my kids can eat pancakes for breakfast and not want a snake 30 min later I’ll eat them.

Thanks Kayla.  Those sound quick and healthy.  How long do they last until they eat again?  I am hoping to fill us up enough to avoid needing a snack time before lunch.

I am finding many great sounding overnight breakfast recipes at ihearteating.com, like this Mexican casserole.  I think I can omit the bacon and it would still have plenty of flavor.  They have many versions of french toast casserole, and overnight oatmeal.  I love the idea of putting a few things together at night and throwing it in the oven when I get up, or having it ready in a slow cooker.

Our breakfast casserole – (you can add what you’d like) –

18 eggs, 1 package frozen hashbrowns (or do your own), ground turkey with seasons based on what flavor you’d like it to be, veggies, cheese.  Crockpot 4-6 hours.  Basic simple and only put what you’d like in it!

We love cream of wheat! (using milk NOT water)

We also do not do morning snacks

Soup, yup. I’m not a big breakfast eater either unless someone else makes it.  So I like easy go to.  We do eggs from scrambled to fried and through n a lot of veggies when we can.  Many of the other things already mentioned too, hubby cooks breakfast – yeah!  But don’t limit yourself.  Nothing wrong with food whenever you want to eat it.

We do morning snack and skip afternoon snack since we eat dinner at 5. But the days I make the sour cream pancakes they can easily skip snack with out even noticing. Ou can also sub the sour cream for whole fat yogurt.
