    So I have made paste, boiled down tom’s for enchilada sauce, pizza sauce, etc.  But I haven’t just got a GOOD tomato sauce to can.  You know to use for all those other things I need tom sauce for.  Does anyone have a tried and true recipe with the spices and amounts to add to my toms.  I want to do get going before my next batch of toms get’s to old.  Thanks Misty

    this is per 3 lbs tomatoes (about 9-12 medium)

    heat oven to 475 degrees

    line a baking sheet with foil.  into it, set a cooling rack, like you’d use for cookies.  

    cut tomatoes in half from pole to pole, don’t bother seeding or anything.

    in large bowl toss tomaotes with 2 tablespoons of tomato paste, 2 tablespoons of olive oil, 1 teaspoon of minced rosemary, 1/8 teaspoon red pepper flakes, 6 peeled garlic cloves, and 1 onion cut into rings that are about 1/2 inch thick, add 3/4 tsp salt.  minced fresh oregano, about 1 tsp would be nice too.  toss all together until coated with paste, oil, and herbs.  

    make a small foil square tray and put it in middle of prepared tray/rack.  into foil, put garlilc and onions.  around it arrange the tomatoe halves.  roast in oven until tomato skins are well charred and the veggies have good color.  about 45-55 minute.

    put garlic and onions in food processor, and process until finely chopped, about 5 1-second pulses.  add tomatoes, 1 teaspoon red wine or balsamic vinegar, and 1 tablespoon olive oil to processor.  process in a few pulses until tomatoes are broke down but still a bit chunky.  scrape down the sides of bowl, adjust for salt and pepper to your taste, adding up to 1 or 2 tsp of sugar to balance acidity.if using fresh,  toss with hot pasta and sprinkle with crumbled goat cheese (ridiculously amazing).

    if canning, put on stove and keep warm, add to hot jars and process probably about 10-15 minutes in hot water kettle.

    freezes beautifully.
