I’ve read about not overloading the little ones with too many books. How many is too many?

I think it depends on the child and the books you’re reading. A bunch of separate chapter books could be overwhelming if read multiple days per week each. I try to have one family literature read aloud going (right now it is Swiss Family Robinson). Then I read to my younger ones from picture books or other chapter books that I can break into short readings (think, a Tales of ___ by Beatrix Potter or part of a chapter from a regular chapter book like Charlotte’s Web). They also listen and read scriptures with the family, listen to our history if they are interested or in the room, etc.

But specific to them outside of our family read aloud I usually do picture books or 1 chapter book broken into smaller chunks.

I think that for little picture books that are read start to finish in one sitting you can read as much or as many as they want.  For chapter books, I agree that less is better at one time.  Especially if you have a history spine, living science book, bible reading, etc. already going, one literature chapter book is plenty.
