    Although I don’t celebrate or observe Valentine’s Day, I love these pink pancakes! So I though I’d pass this on to ya’ll for your celebrations:

    (though I do go all out on St. Patrick’s Day-not because I’m Catholic, but because I have lots of Irish on both sides! Does this mean I’ll make green pancakes? Probably not…)

    How do these pancakes taste? Does adding the beet puree alter the taste much?

    My mom used to feed us canned sliced beets at least once a week when I was growing up, and I sort of developed an aversion to them….but I would be willing to try using a fresh beet in recipes where it wasn’t the standout flavor.

    (I nearly lost my taste for spinach, too, over the canned spinach onslaught of my youth, but somewhere along the line, I found that I love spinach salads and fresh spinach cooked gently with the right seasonings. I don’t really blame my mom–she was just trying to feed a family of 5 on one income with added medical expenses, so canned goods were the cheapest way to go back then.)

    I haven’t tried them yet, but on the blog page, she states that the pancakes do not have a beet taste.
