I am wanting some healthy bread machine ideas that acutally work. I need basic and simple. I would also love to do sourdough bread but when I read about it I want to scream, it seems so complicated. I don’t have a lot of fancy equipment. I have a nice breadmachine. I really hate making white bread in our machine but whole grain never turns out……
Would love a great book that does not use horribly expensive ingredients or complicated recipes.
Have you checked out GNOWFGLINS (www.gnowfglins.com) for sourdough? She has an entire ecourse that is fabulous and really takes the mystery out of sourdough. There are also ecourse for cultured dairy (which I loved because we milk cows,) lacto-fermentation and a fundamentals class which teaches the basics of traditional cooking.
I used to have a Zojirushi (sp?) bread machine and sold it because I rarely used it. But here is the recipe I used: Put the ingredients in this order…
1 1/2 cup hot water
1/2 cup oil (I use olive oil)
1/4 cup honey
4 1/2 cups fresh milled flour (I use a combination of hard white and hard red but use whichever hard wheat you prefer if you’re fresh milling. Otherwise use your whole wheat)
1 tsp. salt
1 tsp. gluten
1 TBS. lecithin
1 TBS yeast
Bake as instructed by your machine. What I would do, however, is just have the machine make the dough, and take it out and bake it myself. We didn’t like the finished product when it was baked in the machine.
It’s really a great book. I have the original one, but now there is a healthy version too. Your library might have one or both books and they take common ingredients (at least all the breads I’ve made).
And on the gnowfglins sourdough ecourse, they have developed this artisan bread for sourdough. I’d love to try it, but haven’t yet. (I sound like a walking advertisement for gnowfglins…but there’s just really great stuff there.)
I signed up for the Gnowfglins e-course not too long ago, mostly because I wanted that sourdough adaptation of the artisan bread in 5 minutes recipe (which I had done with regular yeast for the past year or so.) Absolutely worth it….and I’ve gotten some other great recipes too. I had not been successful with sourdough until I tried their tutorials. =) So, I’ll join you being a walking advertisement, Robin. =)
