I like to do two of one meal and freeze one/eat one. Never thought of tripling or quadruping though. Great idea!
I find that casseroles and pasta dishes work well. I have a lasagna in the freezer now. YUM!
I need to start a crock-pot thread. I want to use it more, but I’m tired of all the same meals I always make in there.
I did a whole Saturday freezer meal day and it whooped me LOL! But oh those meals were so nice when we brought our DD home in February from China. Those meals coupled with meals from church and family allowed me to feed our family home-cooked meals for a whole MONTH with not having to so much as do more than REHEAT!
I also buy hamburger meat and chicken in bulk and then freeze a lot of it cooked (cubed or ground as the case may be). This truly saves a ton of time and cuts down the mess too.
If I can have my meat and/or main dish done, it is so much easier to throw together the sides.
