I am entering the second trimester of pregnancy and starting to feel some better. Cooking is still a challenge though. I want to make some main dishes to freeze but can’t think of much. Any ideas?
chicken enchiladas – 3 kinds – cream based, green sauce, and red sauce
pizza pasta
curried lentil stew
breakfast casserole
pork chop potato casserole
chicken cordon blue casserole
I also like to cook up lots of seasoned taco meat so we can have various Mexican foods quickly. And usually have browned ground beef and cooked chicken in the freezer for faster meal prep.
I’m going to try some of the crockpot freezer recipes Rebekah has. I’ve found several others as well. I’d never thought to prep meals for the crockpot, which I think is BRILLIANT, since I don’t like using the oven right now.
My favorite freezer meals are the crockpot ones, because of texture and because of ease – it’s SO much easier to do massive freezer meals when you don’t have to cook or assemble anything (like enchiladas – I know – they’re good, but I’m talking ease). I’ve done lots of different freezer meal cooking days with friends as well as on my own and I’m kind of a lazy freezer meal girl – I don’t like doing a 12 hour freezer meal day. What works REALLY well for me – especially if you’re pregnant and not feeling well for long stretches of time… I like to prepare one recipe times four – eat one for dinner and three for the freezer – it can take a bit longer than making a meal for dinner, but not too much – you can also do that five days in a row, doing all prep (cutting veggies, shredding cheese, etc…) on the first day and then mostly assembly the rest of the week.
Sue Gregg has some really good recipes you can freeze. A favorite of mine is called Autumn Stew.

Rebekah – that’s how I do my freezer cooking too. Just triple or quadruple a recipe and freeze the rest. I’m new to the freezer crockpot stuff, but I think it looks awesome.
Yep. You don’t even need to cook the stuff. Just chop, measure, bag, freeze, then stick in the crockpot later. Some people take it out overnight (in the fridge) to defrost for the next morning. Others just plop it in frozen – if you do that make sure you freeze it in a shape that will fit in your crockpot.
I like to do two of one meal and freeze one/eat one. Never thought of tripling or quadruping though. Great idea!
I find that casseroles and pasta dishes work well. I have a lasagna in the freezer now. YUM!
I need to start a crock-pot thread. I want to use it more, but I’m tired of all the same meals I always make in there.
I did a whole Saturday freezer meal day and it whooped me LOL! But oh those meals were so nice when we brought our DD home in February from China. Those meals coupled with meals from church and family allowed me to feed our family home-cooked meals for a whole MONTH with not having to so much as do more than REHEAT!
I also buy hamburger meat and chicken in bulk and then freeze a lot of it cooked (cubed or ground as the case may be). This truly saves a ton of time and cuts down the mess too.
If I can have my meat and/or main dish done, it is so much easier to throw together the sides.
