I made this yesterday and it was terrific. Could be made better with walnuts, IMHO. Next time I’ll try using honey, truvia or something other than sugar, but it is very tasty as is!

Thanks Christie, looks great!  I’ve never used coconut oil, I’ll have to try it.  Does anyone cook with stevia?  I use pure stevia powder in my tea/dressings, etc. but haven’t figured out how to substitute it for sugar in baking yet.  It hardly takes any before it gets bitter rather than sweet.  Any good tips?  Thanks!

Thank you.  In this hot weather my bananas are getting brown fast.

yum!  I have been using organic dehidrated cane juice for sweeteners….. is that just as bad as using processed sugar?

Wow, that looks really good! I’ll have to save the recipe for later as I have cut out all sugar for now. I have been GF for 2 years now and baked goods can be so hit or miss. Thanks for sharing a good one!

I am going to try it with xylitol next b/c I have cut out most sugar, too.

I made this tonight (into muffins) with sucanat.  Everyone was raving about it!  Thank you!
