    I hear you, missceegee!  We have been known to eat a dozen and a half in one sitting!!!!  I use eggs a lot, but have to ration them out by using other breakfast items.  I can get good pastured eggs for between $3 and $5 here in NE.  In TX I had to pay $6 and drive 3-hrs round trip.

    Well, I guess it is good to have chickens then.. 🙂  We have tons.  Love chickens. If you want to know more about chickens let me know. They are pretty fun. Great for kids too.   We just hate it when they die. 🙁 They become beloved pets after awhile. They lay 1 a day unless you change the their feed or sometimes the weather can stop production. If they are molting then they will stop also. but other than that it is 1 egg a day.

    Chickens are such a blessing. Plus, littles can have fun helping with their care!

    Chickens are outlawed in my city.  Which I personally feel is stupid, but they’ve been fighting it for years and haven’t made any progress.  When we move next time I’ll be very careful to choose a chicken-friendly area!

    Our pastured eggs are $4.00/doz…so I feel a little spoiled! But I just paid $9 for a gallon of raw A2 milk, so maybe not so much?

    We have friends with chickens, but they are not legal in our area (though I know two families with them). I would need 6-12 chickens and there is no space for it, sadly. I hear you on the raw milk, too. I pay $8-9 a gallon for that, too. I guess I need a farm. 😉

    I suppose it depends what you mean by healthy…but my normal breakfast is usually some form of a green smoothie.  I like to use either kale or spinach in it…an easy way to get lots of vitamins and fiber. On ocassion I eat steel cut oats topped with applesauce and cinnamon.

    Here is our menu from this week:

    Homemade Sausage & apples – I buy ground pork and add the seasonings we can have whilet his is browning, we slice apples and add them to the sausage; stir gently or the apples will fall apart. If you can have it, you can sprinkle cinnamon and a bit of maple syrup – though we skip the cinnamon and sub agave nectar for the ones that just need to have a bit of something drizzled over it.

    Pork Patties & Waffles – I use the ground pork and make patties ala burgers.  We make either almond meal, buckwheat, or chickpea flour waffles.

    Soaked Oatmeal – This was cooked in the crockpot overnight. It smells heavenly in the morning.

    BLT Biscuts – We made chickpea biscuts and placed bacon, avocado, lettuce, & tomatoes (for those who can eat them).

    This sounds gross, but we love cottage cheese pancakes for high protein. Use a blender for the batter and you won’t have stringy melted cheese in your pancakes. I’ll try to give the recipe. I never measure anything any more–too much trouble since we have to make everything from scratch.

    I put in about a cup of cottage cheese, 3 eggs, sometimes some greek yogurt, 1 Tbsp oil, sometimes some pumpkin puree (add cinnamon and pie spice if you use pumpkin–and they’re more wet inside when they’re cooked like pie) then I use a couple cups of freshly ground oat groats or you can use whole other grain flour I’m sure. We have to use oat flour if all our allergic people are eating it (if you use white flour, they aren’t nearly as good) also I use 2tsp cream of tartar mixed with 1 tsp baking soda since we can’t use baking powder because of corn starch. I think that’s it. Oh, a little water so the blender can run, but not so much that it’s too thin–maybe 1/4 cup? They are really yummy and all the protein is in there in case your family only wants the pancakes.

    Maybe I should simplify the recipe:

    1 cup cottage cheese

    3 eggs

    1/2 c pumpkin if you want–also add cinnamon and pumpkin pie spice

    yogurt optional maybe 1/3 c

    1 Tbsp oil

    2 c whole oat flour

    2 tsp cream of tartar mixed with 1 tsp baking soda or about 3 tsp baking powder

    1/4 water (or enough to make your blender run)

    I hope that’s it in case anyone tries it!

    We especially love the pumpkin version.

    Also, my adult son that has to avoid feeding his candida eats 3 eggs every morning and he puts left over dinner in it–veggies or meat or whatever and cheese. It makes his eggs more interesting.

    And I second whoever said it gets easier after you start eating healthier!

    Love all the ideas!! It does seem overwhelming at first…it will take more thought, however, i am encouraged that it will get easier as we go…hope that makes sense!! Thank you…Jillian

    BTW I love to pancake idea as well! to make dairy-free cottage cheese, blend firm silken tofu with a little lemon juice and a little salt. I’ve never tried it in anything like this, so I hope it will work.

    Wow!  I didn’t realize eggs cost so much now!  We have chickens and usually lots of eggs.  My children are not too keen on PLAIN eggs, but they love them with a little cheese sprinkled on them!  Another tasty way to eat scrambled eggs I discovered by default this week: mix in a little sour cream with seasonings when you scramble them!  I had made a little veggie dip with sour cream, salt, garlic powder, and onion powder earlier in the week and had just a tad bit left over.  It was perfect for perking up breakfast!  Another hit with my kids is “taco eggs.”  I add a little leftover taco meat when the eggs are almost cooked – omelet style, with a sprinkling of cheese.  My husband loves over easy eggs with refried beans.  That was a typical breakfast in Honduras and Costa Rica.  Smoothies are loved here too, but are usually a special treat for breakfast!

    Not to brag but I pay $2.50/gallon for raw milk and $1.50/dozen for farm fresh eggs! These come from my sister, who lives just down the road and has helped us to raise our own chickens for butchering this year. Two weeks to go and we will have lots of chicken dishes!

    Sorry to get off track! But I love all the new breakfast ideas.
