This sounds gross, but we love cottage cheese pancakes for high protein. Use a blender for the batter and you won’t have stringy melted cheese in your pancakes. I’ll try to give the recipe. I never measure anything any more–too much trouble since we have to make everything from scratch.
I put in about a cup of cottage cheese, 3 eggs, sometimes some greek yogurt, 1 Tbsp oil, sometimes some pumpkin puree (add cinnamon and pie spice if you use pumpkin–and they’re more wet inside when they’re cooked like pie) then I use a couple cups of freshly ground oat groats or you can use whole other grain flour I’m sure. We have to use oat flour if all our allergic people are eating it (if you use white flour, they aren’t nearly as good) also I use 2tsp cream of tartar mixed with 1 tsp baking soda since we can’t use baking powder because of corn starch. I think that’s it. Oh, a little water so the blender can run, but not so much that it’s too thin–maybe 1/4 cup? They are really yummy and all the protein is in there in case your family only wants the pancakes.
Maybe I should simplify the recipe:
1 cup cottage cheese
3 eggs
1/2 c pumpkin if you want–also add cinnamon and pumpkin pie spice
yogurt optional maybe 1/3 c
1 Tbsp oil
2 c whole oat flour
2 tsp cream of tartar mixed with 1 tsp baking soda or about 3 tsp baking powder
1/4 water (or enough to make your blender run)

We especially love the pumpkin version.
Also, my adult son that has to avoid feeding his candida eats 3 eggs every morning and he puts left over dinner in it–veggies or meat or whatever and cheese. It makes his eggs more interesting.
And I second whoever said it gets easier after you start eating healthier!
