I hear the Lord convicting me to make changes. Can anyone give me ideas for breakfast, any meals that are healthy…I need to change my eating habits to consist of more fresh food less processed…it not only will help my blood pressure but also the very well being of my family. It is time…any wisdom, sharing ideas when you have time is more than appreciated. Bless you. Jillian
Smoothies; Bacon and Eggs (pastured if possible); cold overnight oatmeal (yummy, there is a link on my pinterest Christie G.); make ahead breads from quality ingredients; boiled eggs; toast and fruit and yogurt
we are on a pancake kick right now. I make a large batch of half dollar size buckwheat or organic brown rice flour pancakes and then freeze them. it is easy to pop them in the toaster and go. smoothies are a favorite with us as well. really fills their tummies up with fruits and veggies. they have a ton of energy and often last untill lunch skipping snacks altogether. (that says a lot for my littler of 5 kiddos 6years and under!) My husband thinks its gross, but I make extra bacon(nitrate free). and put it in the fridge. the kiddos love it for a snack or for breakfast the next day. frozen grapes are great for the summer.
Congrats on the commitment to change your family’s way of eating! Most mornings my girls have plain yogurt with a bit of maple syrup or fruit spread mixed in, topped with high-fiber cereal. We like Trader Joe’s brands. Some days I make toast and eggs. I have a fuzzy logic rice cooker and this is so great! I put steel cut oats and water in the night before, then in the morning all I have to do is turn it on and sip my coffee. Soaking the oats overnight give them better texture, in my opinion.
If you do the same healthy things often enough then they become easy and routine. I really limit sugar in my house but we love butter and cream. Good luck!
Our breakfast ALWAYS includes pastured eggs. I find that children are much more attentive if they have a high-protein breakfast, and eggs are easy and cheap. With our eggs, we also add in one or more of the following:
toast with lots of pastured butter and maybe some raw honey (using Ezekiel bread in the red package because it’s soy-free)
-eggs (but we don’t do that overly much for the kids because, even though they are very nutritious, if done to much they create allergies/sensitivities in bodies. Especially in my son)
-oatmeal and oatmeal type breakfasts. ie. leftover oatmeal casserole, oatmeal scones (also made from leftovers)
-fruit salad and goat’s milk yogurt
-gluten free pancakes (we also have done the make ahead, freeze and then toast them as needed version, but that was when we had a toaster oven)
-smoothies made with goat milk, fruit, maple syrup, etc. (I usually add things to them like ground flax seeds and coconut oil) then use up any unused smoothie to make Popsicles for snacks
-gluten free French toast (we try to only use homemade gluten free bread)

JSpring – Right now I buy a good bread, but as the weather cools I move to baking ours at home. Buying bread saved me time that I haven’t really had with adjusting to Mason’s medical needs and many many appointments. I’m finally in a groove where I think I’ll be able to keep up. We go through a full loaf with my extra long pans in one snack, more at a meal, so I have to bake a lot. (Family of 9 here).
@crazy4boys, ds loves fried as runny as possible; dd loves scrambled. They have their eggs like this 99% of the time and don’t ever complain about being bored with them. I also love over medium fried eggs and eat them like this almost everyday too. For variety, however, you could try quiche, omelettes, or egg muffins.
For egg muffins:
Beat desired amount of eggs and pour into greased muffin tins. Add already cooked sausage, bacon, potatoes, peppers, onions, cheese, etc. into each muffin cup. Bake until fluffy and cooked through. These are great for on-the-go breakfast.
Out of the 6 there are 2 I don’t care for that much but every taste is different;) Great thing you only have the work once and can make as many of those ahead as you like. They are good a few days in the fridge or you can freeze them and put them in the fridge the day before you use them. You can go as organic as you want with the ingrediens;)
All the above and I like Chicken or turkey burritos. Some with beans and cheese. Others with eggs. What ever I have. You could do ham or beef. I like to wrap them up and toast them a little on the stove to warm them up. Usually it is leftovers. Sometimes we put potatoes or hash browns in them even eggs. You can make them up ahead of time and freeze or fridge them. Then they are ready to go. I also like to make finnish pancakes. On Sunday’s we have Rice, Bacon, and Eggs. They are all mixed up in a bowl and we never have leftovers. 🙂
My daughter likes most of these, as well as breakfast burritos with eggs, bell pepper and turkey sausage. Cinnamon Chex with soy milk is a big hit, as are pancakes/waffles. Somedays we even eat leftovers from the night before, just for a change! She’s allergic to dairy, so I’ve had to get creative…especially with breakfast and it’s focus on milk, cheese and yogurt.
