Grasshopper started writing when she was only 2yo.  She started with a couple of beginner Kumon books, but I haven’t used any programs for about a year and a half.  I am very pleased with her progress, and I don’t think that she needs any formal programs.  I want to give her just enough practice to keep up her skills.  Right now, she copies just one line per day, which takes her just a couple of minutes.  I have been having some difficulty figuring out how exactly I want to handle the assignments.  Sometimes, I think I should give her copywork that addresses specific phonics rules.  Other times, I think that she should be copying something that is uplifting (like a scripture verse).  Still other times, I find myself thinking that she should be able to choose what to copy, which makes her more invested and interested in it.

Can anyone offer an opinion or refer me to a resource that will help me to decide?

My personal preference is for the uplifting option. You can vary the copywork by using scripture as well as poetry or favorite passages from literture. I would make the copywork sessions enjoyable and focus on creating a book or collection of handwriting that is pleasurable to make and to look at later. Phonics will come without having to address the rules in copywork, imo.
