My girls want to make an American Flag Cake for July 4th. I’d like to make it out of Vanilla cake, but I’ve not found a recipe for a sheet cake in vanilla. I want yummy, not ok for a GF cake. So any tried and true recipes out there?
I found these recipes, but I don’t know if they will translate to a sheet cake. Thoughts?
I don’t. But here’s a cute idea using just fruit. Perhaps you could make it like a fruit pizza and use a sugar cookie type crust with the cream cheese like topping (or whipped cream). Maybe a pudding base. Jello? I hope you find something you like.
Christie, My daughter uses the Bob’s Red Mill gluten free pizza crust mix as a base for cakes. They are delicious and moist. She made a carrot cake that was the best carrot cake I’ve EVER had. That’s saying a lot for anything GF. So while I don’t have a recipe for you, you might try googling for a recipe using that mix.
LOL Sue, That paticular cake was 2 cake recipes, but we were having lots of family come and we had to have enough cake. I just made both the chocolate cake and the yellow (vanilla, white, whichever) for the other 2 birthdays this month and only made one recipe. I just used smaller rounds. The best thing I have found when I altered these recipes to be gluten free was that they have to stay thin to bake all the way through. So I only put an inch or so in any of my shaped pans and just bake the shapes until all the batter is gone. =) It works well for us since I have all my cake decorating pans and shapes from days long gone by and I have duplicate sized pans.
We can’t use most mixes because they have yeast in them. That seriously limits what things you buy off the shelf.
I can highly recommend Spunky Coconut’s Vanilla Bean Cake! To make a sheet cake, you’d probably have to double or even triple the recipe, but it’s worth it! Not to mention this cake is dairy-free for your little guy and sugar-free for you. Win-win-win. Trust me on this…I love this vanilla cake even more than vanilla cake that has flour and all the yucky stuff in it.

I ended up making the one Lindsey suggested and tripled it for a jelly roll pan. I made a simple cream cheese/whipped cream frosting from elana’s pantry. It was a HUGE hit with everyone and no one believed that it was made from beans!
