Cookie Time!

    I made a new-to-me cookie a couple of days ago that is a keeper.  I started out with this recipe for Kiss Pies (cute name, isn’t it?)

    and they were underwhelming.  Too sweet, not pretty like the picture at all LOL. Pinterest fail.

    Then I changed the recipe somewhat – I made Blueberry Tarts and they are fantastic!

    I used a biscuit cutter to make the rounds – made 13 rounds from one premade crust circle – I think I could cut out 11 rounds then I had to reshape the dough bits to make the last two.

    Roll the pie crust out on a layer of suger (so skip the egg wash, sugar sprinkle part)

    Fill with 1/2 t blueberry jam (or any other jam would work I am sure – but don’t use too much or the cookie will be a mess!)

    Moisten the edges of the dough circle with water (I used my fingertip) and fold up by thirds instead of fourths like it shows in the recipe – you will end up with a much tidier cookie.  Seal the edges well (a small amount of jam may still leak but it is ok – should look appetizing).

    Bake on parchment paper or a baking mat.

    Makes beautiful and delicous individual blueberry pies that you can pick up and eat!  Not too sweet, either.  I am making these as part of my Christmas morning feast!

    Mmmm.  This is all to yummy. I can’t wait to try some of these.  I am looking for a recipe without butter or milk. Any ideas???  ok I have a receipe for a candy I made years ago. It was so delicious I thought I would share it with everyone. I call it White Chocolate crunch. You could make it with different cereals but this was what I came up with and we all liked it.

                 24 oz White Chocolate Bark (Block)

                 3 cups Peanut Butter Captain Crunch or King Vitamin. (At the time we used captain crunch)

                 3 cups Rice Crispies

                 12-14 oz peanuts

           Melt chocolate and mix ingredients together.  Before they cool spoon out in desired size bites. I used

          wax paper to spoon them out on.   You can add more nuts or cereals or m & m’s  What ever you desire.

          This was just what I came up with. You may even want to add flavorings or sprinkles before they cool.

           If they are setting up to fast  you can always put the batch back on the stove and warm it to get it to
